I have a single burner style coleman, but I use it outside on nice days.
In the truck I have a bagle toaster, aN electric oven, and a hot plate, and a slow cooker.
They all run off of a 1500-2000 watt inverter.
I plan my meals and when I go to Walmart each week, I buy just what will fit in my refrigerator, plus soup and sandwiches while I'm working.
I found that I could prepare decent meals for around $7.00 versus almost $20 everytime I eat in the truck stop.
The slow cooker is my go to. I can put a meal on in the morning when I get ready to hit the road, have part of it when when I stop for my break and the rest when I stop for the evening. -

I have been using a Road Pro lunchbox cooker for over 4 years now. Never a problem with it. Not every day, but a couple times a week.

The lunchbox is great for warming,baking,and toasting.I make stew,chicken and dumplings,meatloaf,baked potatoes,breakfast casserole,biscuits and gravy.it's great.it doesn't take up much room and it fits between the wall and your mattress so it won't tip over

Until I got a truck that actually had a fridge/freezer combo, I ran a $99 Haire Fridge/freezer combo from Walmart. Since I never have any one in the truck I put it in place of the passenger seat.
I have a slow cooker, a toaster oven, and a hot plate with two pots and a small iron skillet. There isn't any meal I can't cook with those items and my inverter.BlueThunderr, NavigatorWife, Lepton1 and 1 other person Thank this. -
I like mine. Same fridge. I put it behind my driver seat. Company didn't care that I ripped out half the cabiniet. They actually loaned me the tools to do it hahaha

Not rotisserie, but one heck of a baked chicken, and I do a mouth watering fried chicken. Have also done chicken chow mein.NavigatorWife and KMac Thank this.
