I've done it a few times at night but does anyone know if this is truly unsafe, driving from Ft Stockton to Laredo?

What's not safe about it? Usually not much other traffic out there, except Border Patrol.

I make that drive about half the time I come off home time, I enjoy it. Watch out for wildlife and for God's sake, pay attention to the giant signs in Carrizo Springs.

Saw a mountain lion the last time I went that way, be careful if you hit the shoulder to pee.

I was exhausted and parked up somewhere dodgy some years back down there. Had no idea where I was just close to the border and zero parking. 2 border patrol guards helped me. Took me to a bit of scrap ground leading to a prison. Couldn't see the prison but they assured me it was there. They told me I was quite safe but that I would be bothered by illegals tapping on the door all night asking for a lift. I wouldn't get any sleep.
They said they know it is a prison and they stay away from that area. It was a peaceful quiet night.

BTW that Carrizo Springs area looks absolutely beautiful. Would love to relax there some time.

If I saw a mountain lion while taking a piss that would be my first cue I'm in the wrong part of town

Wild hogs would be a more likely threat.

I don't know. Smugglers? Robbers? There's some pretty isolated stretches out there and the border region doesn't have the best reputation but I don't know if this is overblown. I don't have a problem with the Eagle Pass or Carrizo Springs area at all. They both seem like fairly nice places.
