Talk to your school and see if they will let you practice in their trucks for a while. Explain what happened to them and if there worth a crap they will let you spend a few hours practicing at there facility. It was their fault, and the dot officers, for letting you get your cdl if you cant downshift adequately. Just float like 5-8 and back down, and back up, over and over. Hint: I always use the clutch to get the truck out of gear downshifting, then hit the gas a bit and put it into the lower gear without the clutch. All you have to do is give the gas pedal a little quick push when your rpm's get to around 1100-1200 area and it will go right in. Once you get muscle memory of how hard to push it will be easy from there on out.

the problems you described are ALL too common.
i was told by one driving school that my bad work history would keep me out. guess what... it DID NOT!! -
But when I see what some of the other folks have put up with here, folks who are probably no where near as tough as you are, I think you wussed out. Your driver training only lasts a relatively short time, so deal with it.
I didn't see anything in your post about having a trainer that had such gross personal habits that it made you sick. Yeah, we have drivers here who had that problem with their trainers.
I didn't see anything in your post about any type of sexual harassment. Yeah, we have drivers here who had that problem with their trainers.
So you got yelled at and made nervous. Perhaps you should have tried having a bit of a "heart to heart" with your trainer. If that didn't work, perhaps a "come to Jesus" would have been in order.
If you still want to wash my mouth out with soap, bring it on. I prefer Lava. -

It occured to me that I should probably appologize to all you trainers out there that I may have offended. I'm sure you are all great trainers. I just happened to have gotten 2 that maybe wasn't as good as you. Sorry

Between double-clutching and floating, I'd go with whatever is easiest on the equipment. I'd make sure my student could double clutch, but if they could float without making a mess of my tranny, that was fine with me.
Myself, I haven't doubled since I was a trainee. -
