Told everyone he meets at truck stops.
Told the Texas immigration officer.
Told the CAT scale operator.
Told the customer.
Told the yard dog.
Told the waitress at iron skillet...
So far he seems to drive well enough but exhibits exaggerated anger (profanity, throwing gloves, etc) if he has to connect or disconnect from a trailer...
It's weird but doesn't seem dangerous, yet.
Should I say something before something happens or just see how it plays out?
Is this him looking for help or just a symptom of his condition?
I am worried about mentioning it to the DM as it could be a legally protected status.
Is this just a personality quirk I can safely ignore forever?

Who can really answer that? You have personally experienced this person and are wondering.
If you are worried, I would just stick to something that isn't in a "protected class" such as the profanity laced rage fits....Take that to a higher up and at minimum, ask for someone else.
Things may get worse as he gets more comfortable with you. Things may not.

Already knew I wasn't allowed to blindside was waiting on instructions, planner farmed that out to a local who can do whatever the he'll he wants.

He was pretty angry our route on that load would take him home, instead we are going further west.
He never got mad at me as we were both taught never to even attempt a blindside in their trucks. He had a handful of politically incorrect suggestion regarding language barriers, however. -
It's obvious than that he wants to be a live on the road trucker. I would have been mad if I was being dispatched though home. If it was not time for me to be home.
