My concern right now is.. where the heck do I mount my tripac on this thing? Also will my moo moo bar off the front of the 2013 fit on the 2000?

The TriPac might need to be mounted on the passenger side before the fuel tank underneath the sleeper or you may have to move the fuel tank forward, remove the right rear fairing and mount it on the frame rail.
The bull guard may work if the frame rail spacing is the same as the 670. -
I think the 670 is wider.

So I have alot of fresh 10-30 Rottella T5 laying around. Would that be a good oil to run in the Series 60?

What is the operating rpm range of the series 60? Also are these older trucks supposed to ride rougher than my 2013 did?

. Just got the truck back from the dyno.it is putting down every bit of the horsepower that's advertised on the engine label. Detroit says it has absolutely no blow by.
