Hard to say, next time it happens, try turning it off for a few minutes, and back on. Sometimes the expansion valve freezes up, from moisture in the system, turning it off allows it to thaw out. Or it can just malfunction and the needle gets stuck, in the wrong position, maybe even have some Micro trash in it. Sometimes turning it on and off, will clear it out. Worth a shot, anyway.
