I recently went through a little town on the western edge of Texas on I-40.... the town was Vega, and let me tell you, I've had Tex-Mex from all over the country, and this place was the BEST EVER! It's called Roosters, and when you get off the I-40 at exit 36, turn south and go to the first 4-way stop, hook a left. About 1/3 mile on the right you'll see the place... Plenty of shoulder and empty lots to park on... REAL trucker friendly town... the owner and his wife will treat you like visiting royalty and the food is to die for! They recently purchased an empty lot right across from their place and will (if given enough reason), get it improved and ready for trucks to park in.
If you like Mexican food, you can't beat this place!

Also when you turn out of the port of houston theres a little trailor in a parking lot has some of the best mex ive ever had.also have really big glass bottle cokes imported from mexico.I look forward to every load coming out of there.

Best Mexican food I ever had was at the FINA truckstop in Plateau TX east of Van Horn at the top of the hill. Hot enough to burn a hole in the table, but oh so good!

I love Mexican food, but avoid those Mexican buffets when heading out to nomads land, 100 miles from the nearest commode. For me the best is those little Taco stands in the middle of farming communities. I'll get 3 carne asada tacos (Usually a $1.50 each), made with corn tortillas (sometimes homemade) with pico de gallo, salsa, cilantro, and squeeze lime juice over it. Mexican style with no cheese, sour cream, or guacamole. MMM MMM MMM.... Good eating, cheap, and not very fattening either.

The best Mexican food that I've eaten was prepared by my old supervisor who is Mexican. That woman could cook her butt off. She was pretty angry whenever I declined seconds. So I ate a small second helpings occasionally.

Any of the Santiago's chain along the Colorado front range. They're all family-owned by the same family. The HOT chilli is to die for.

The Commerce City location on 72nd Ave is just down from Transwest Freightliner - the lot behind the restaurant can hold a tractor trailer, and you can pull over on the access road along US85. -
A place called Papa's Pantry next to the Pilot in Van Horn, TX had the best Chiles Colorado I've ever had. Been years since I've been through there.
