I can tell you the very little I know. Flatbed pay fresh out of their school is 35cpm and most people have been saying average 2200-2600 miles per week.

For the best and most up to date info, call or email the recruiters. That's what they're there for and get paid to do, answer your questions. Just go to the Roehl site and email away. Should answer every question you have. As far as the Dairyland gig, you may luck up and get someone on this site that's on it. Otherwise I'd just worry about getting the cdl (if you don't have one) and getting in the door with Roehl. You have to put some time in first before you get some dedicated routes (from what I've been told while here at Roehl's cdl school).
Good luck to ya! -
Sometimes it can take a while to get on dedicated (I've heard up to two or three years of you have just one in mind), one of my friends got on her preferred dedicated right out of phase 3 (about a month after she got her own truck)

As far as unloading you will touch nothing customer unloads or a lumper. Now flatbed you will have to tarp and un tarp which will keep you in better shape. Its up to you to decide which one is best for you.
