I have a cascadia 2018. Its coolant tank was internally leak so i changed it. And now sometimes it shows low coolant warning and shuts the truck and after few seconds it again good to go while coolant level is good. Any suggestions what could be the problem.

The sensor and wiring harness going to the sensor are problematic.
In a pinch you can unplug the sensor so the truck will run (with a check engine light).

I had a whole new tank with sensor. Within two months the sensor failed.
Yes, you can unplug the sensor as stated. Truck will run fine with check engine light on.

Bought a replacement tank on Amazon and sensor went bad after a couple weeks. Bought a replacement sensor and fixed in couple minutes.

You can jump the plug with a paper clip while it’s unplugged to make engine light go off. That way if there’s another problem, engine will come on to warn you. Also, if you chance you get the same code with it jumped, you’ll know it’s the harness, not the sensor. The harnesses tend to break a wire from flopping around when the fans on. Zip tie it good, to avoid that.

The boss had put one radiator and several different sensors. The same one over and over again.
Then one day it just stopped being hateful. Good luck. These cascadias can be funny sometimes.
