If i was to drive for over 340 days and only take a weekend off every 2 months, realistically is it possible to earn 250,000 after all expenses ??

Gross or net? At 8 hours a day, which roughly how many hours you'll be able to drive at 60 mph is 163,000 miles a year. If you're getting $2.00 a mile, you should be able to get $250,000 gross.
