I15 south to US6 east to I70 east to US191 south to US491 south to I40 east to NM6 east to I25 south to I10 east.
The truckers atlas lists NM6 as restricted but that's due to a 27 ton restricted bridge on a county road immediately off 6 but for some odd reason the NMDOT lists it as being on NM6.
You can also run US64 east from Shiprock to Bloomfield and catch US550 south to catch I25. It's about a mile shorter but takes a bit longer. I run this way because my grandparents live in Bloomfield.
Plenty of truck stops and parking areas along the way. -

Plenty of barr around " The Hole " attraction and that town south of the same. -
You get to see the red rock canyons of Utah and also Shiprock. Nice drive.
