Thank you very much for your advise. I am not sure on the defrost if I have to do a manual every day or if the unit would do it automatically. If you read the previous thread you can see my extensive training session.
I do carry a pulp/food thermometer and a laser no touch thermometer. Usually, my trailers are sealed on the runs and I cannot get inside, but have the little access door on the back of the trailer to check. The problem is that the pulp reads the correct temp of the product, but the no touch reads a lot higher on the surface.
