Used that method in Alaska on commercial boats as well...works wonders.

Couple of things to keep in mind--if you do these loads occasionally--you CAN stay ahead of it--but if this is the majority(like some used to do--LOL)after awhile it really cant be fixed--which is why (for example)you see certain trailers--marked fish...
Now as for getting this and other problem loads clean--and odor free--first--don't turn reefer off after unloading--and don't be afraid to knock temp down to freezing--while waiting to or going to get washed out--colder it is--slower the smell permeates--
Now coffee and others will help--BUT--what your best bet is--find a commercial food grade tanker wash--that SANITIZES to USDA standards--not as hard as you think--
In lieu of this--like it or dont--you need to become a little more personally involved--considering--many times--beacon is your only/closest option--and when it comes to washouts--they just do a basic quicky cold water rinse--so its gonna cost--first have them do a HOT water power rinse---then have them soap and rinse--lie they were washing exterior--followed by another full hot power rinse--then YOU will probably have to sanitize--(not as hard as you think)There are many available(and Im not gonna endorse)grangers web site has quite a few that are economical and come in larger quantities--then a quart or so spray bottle carried with you will do the trick---if all else fails--I recomend using Vanilla extract--liquid form--twice during washout--IMHO--works MUCH better than coffee--and doesnt make near the mess.....

I used to haul fresh fish out of Florida and had to get smell out before we loaded the back hual to Florida or wouldn't get loaded we used powder laundry detergent plus had the wash out place use deodorizer it will cost little more than usual cause of the detergent take a minute to rise out but odor will be gone

Vinegar will get the smell out and it's a disinfectant. Once the vinegar smell goes away it will smell fresh

Bleach/Dawn a little comet and some hot water. Then scrub it out with one of these. View attachment 64576
Then never haul fish bits again.
