I’m having a problem on my 2005 Peterbilt 378 with a cat c-13 the oil light comes on and starts buzzing whenever my rpms are over 1500 but my oil pressure on the gauge is perfect if I drop down below 1500rpms the light and buzzing turn off. Any ideas?

Yes,if it is original it's 15 years old.
The other problem could be your pump,BUT you say oil pressure on gauge says good pressure.
Maybe you can plumb in a gauge you know is accurate to check accuracy of dash gauge and sensor.

I’ll change the sensor out hopefully that fixes it when I change it is oil gonna come pouring out of the sensor hole?

No, the oil should be in the pan, with truck turned off.
