Ok, so I know that the mid roof design is pretty much standard across the industry for tankers. My question this...

I'm six foot four, am I going to be cracking my head every time I get out of the bunk?

More specifically, the company I'm going with is running freightshaker cascadias.

I'm 6'1 and stand up with enough room for my fist above my head so you should be good.

You don't need a bunk. Keep driving. You can nap over the seat or steering wheel.
