    My pain in life is that I can't have a grill in my apartment complex. They have charcoal ones for the community, but I never have learned briquettes well enough to put a good steak over the coals.

    This was my first time grilling over an open flame on this particular setup... Past experience has taught me that an open flame can be very unforgiving, so I decided to stick with burgers incase it went poorly. Id rather torch $5 worth of ground beef than $30 worth of premium beef steaks. Glad I did too... Steaks would have been burnt on the outside and raw in the middle... Just didnt have an even enough heat. Next time I will build a bigger bed of coals.

    I don't cook steak its spendy. My uncle would seer them under high heat. Then move the brickets to the side and put the Lid on for a bit to finish it. The seering keeps the juices in. He likes steak rare anyway.

    Thanks for giving me hope that I'm not the only one who still has some learning to do with the grilling. I'm great with gas/wood pellet, or basic stove cooking, but charcoal or wood fires elude me.

    Even in the oil field the would use automatic electric feeder for wood pellet smokers.

    I've had to move to medium recently due to stomach enzymes. When I was younger I preferred a cowboy steak.
