    I'm only 52 but I remember when I was a kid we only bought sweet corn at local farm stands on a day we could take them right home and cook them. The longer the ears are cut off the stalk the more of the sugars turn to starch. Over the years we've bred more sugar and longer to convert varieties but I bet the principle remains.
    I heard an interview with an ethnobiologist studying maize in Mexico who estimated they had over 200 distinct varieties of maize (eating and animal feed) on the verge of extinction because of corporate varieties cross pollinating with the native land races....

    I know they have a load board but don't know much about em. Last winter when we were doing Conklin to Bayonne daily they tried getting in on the action but didn't last long. One of the big wigs got pissed at them and that was the last we saw them. Threw em out

    Sweet corn is a 'special' crop. Field corn is the corn you may see hanging on people's doors between Halloween & Thanksgiving. Might be multicolored. Yellow corn, is just that . . . yellow (regular) corn. Sweet corn is 'lighter yellow' and can even be up to 'white' in color. < Pricey!

    About the price of carambolas here... I said less than U$3.00 per kilo not each... 1 kg = 2.20462 lbs
    I will be cooking something soon.... I need some inspiration...

    Pale yellow and white kernels is called Butter and Sugar... Omg good.
    And if you're in a high rent district the decorative corn is called indian corn (whatever that means lol) and it prices out like steaks FFS... Silly city folks

    The corn sold here in Brasil is yellow and soft just like the sweet corn I see in the US but here it is not sweet.
