    Fridge comes in handy. HOWEVER:

    Eggs: keep for up to five days hard boiled
    Fish: Canned tuna, canned sardines, hot smoked salmon (the smoked fish in a cooler and eat promptly to prevent botulism)
    meat: jerky, summer sausage, salami, etc. chicken tenders, burgers from restaurants,
    Nuts: walnuts, hazelnuts, almonds keep almost indefinitely when vacuum packed.
    Vegetables: radishes, carrots, pickles, pickled beets, get creative.
    Fruits: frozen berries work great as ice packs in a cooler, and then munch on them as they thaw.


    You can't eat out of the truck stops. You can't afford it, neither financially nor health wise. When I was driving long haul, I used to back into the loading dock at Costco after receiving hours and stock up. They have 5 lb bags of walnuts, pecans and almonds, sardines, tuna, summer sausage, etc. Most grocery stores have 1 lb bags of frozen blueberries: nstant ice packs, made of super foods.

    It takes planning and a little dedication, but your body (and mind!) will thank you for it.

    In my previous life I was a professional chef, who spent 4-5 years at rehabs focusing on special dietary needs. Before that I spent about 15 years in casinos and locally owned restaurants. If you need help with ideas for a meal plan I'd be happy to help.

    Good luck to you sir, it sure seems you have plenty of motivation and I'm sure you'll be successful improving your health!

    Really one meal a day will keep the weight on and make you deal with your diabetes symptoms that will be more of a problem.


    Consider this … no sugar, no grain diet, look it up, the guy who created it is called Vinnie Tortorich. Go download the pdf, read through it a couple times and come up with a plan that works for you.

    I have a few drivers who did this diet and dropped a lot of weight. One also took my daughters suggestion bought a couple freeze driers and his wife made all kinds of food for him using the NS, NG diet guidelines. He takes the food on the road with him and has only a kettle where he uses hot water to reconstitute the food, never buying a thing at the truck stops.

    Dieting opinions are like ### holes, everyone has one. lol.

    When I diet I count calories only. That’s all that matters end of the day anyway. 3000 cals is 1 pound. So, what your intake vs what you burn, your deficit will be 1 pound each time that equals 3000.

    Day 3

    Started the day at 0130, no breakfast or lunch today. Was waiting to stop at my favorite little place in Ash Fork AZ, not exactly cooking in the truck but the green chilli burro is amazing at this place. Probably about evened out my 1200 cal a day average I'm shooting for also.

    Delivery is all set for noon in CA tomorrow, called on a Saturday load but no dice with the late unload. Looking for Monday loads now, thinking CA to ID, then back east.

    Last but not least, getting a super single changed. One of mine got pretty chewed up when a while back when I got stuck at my house. I live up a mountain dirt road and taking the tractor home can be a little tight and tricky sometimes. Figure the bill will be about $5-600 out the door for a used I found in comparable condition to what I have now.

    One last thing about this OMAD thing I'm doing, I've got terrible GERD and usually eating early and then nothing makes for a hell of an easier night than I'm used to. Of course I ####ed that up today so we will see.
