    That was a good 450 race wish I was there. I live by Hangtown go every year but that race usually sucks

    Wire mesh or cast iron grate?
    Wire mesh is garbage.

    If you do have cast iron, try heat near 300-350 and freeze the patty before throwing it on, its 3 total turnings (with a 1/4 turnfor grill lines) for good grill lines, generally 3 minutesish per side. Make sure you use an oil (i just use a canola in a spray can) so your grate is properly seasoned.

    Oh, and CLOSE THE LID (also yes, charcoal is superior)

    I just smash my burgers really thin on the grill with cast gates and have it on med-high, like number 6 out of 8 settings. I'd rather have a double cheeseburger than one thick burger

    Ok why not? I make the patties as thin and compacted tight as possible, so they’ll stay together. Nice size, little bigger than the bun. not thick, especially not thick in the middle. Slap them on the grill. No smashing, let them cook on one side, flip once, cook, and once again, slap the cheese on. They come out the right size, and juicy, and don’t fall apart. I want one right now!!

    I do the same except I give them a little push down with the spatula, not really a smash but a firm push
