Never shot it with a temp gun but they will get hot enough to blister 500 degree engine paint on the top half. Back in the day it was popular to have the top half chromed and I’ve seen a few turned up and run hard that had blued and burnt the chrome. Figure that normal exhaust temp on a non turbo NH was 900-1100 and much hotter when working hard. Hence the need for ceramic stand pipes and ability to blow flame out the stack.

So how does the rubber boot, that connects the turbo to the crossover pipe, withstand the heat?

Use silicone. The rubber ones never lasted. They would crack and peel like an old bias ply tire. My uncle had put a orange colored silicone one on back in 1992 along with some to connect the steel coolant tubes and radiator hoses. The one for the intake crossover lasted till about 2003 and it was turned dark brown and hard as a rock. I replaced it with a greenish power products from fleetpride silicone and it is still looking good. I think the power products silicone are blue now.

I have seen those silicone hoses live through a fire and maybe still have a prayer of being used again just never been desperate enough to try.
As far as the actual discharge temp from the turbo a temp gun gave me around 350. On an old jd 6030 pulling a ripper. I’ve heard talk of 500 ish before but can’t verify.

I’m gonna say it’s in relation to your exhaust temps and boost pressures, as well.
