Not so much for the op, but those saying drive on if no one sees. If you take out a stop sign call local pd or 911 anonymously and say it's down at least. That's an accident waiting to happen.

What's the citation for exactly? That's going to matter more than anything. Something like a failure to maintain control or failure to obey a traffic device is going to be ugly.

I watched the local deputy run right over one, hit it square with the bumper of the patrol car, still not sure how he managed that one.

This is something I’ve lived by and I think it saved me a number of times from dinging something. Literally say to yourself. Each time you’re in a tight situation or an unknown spot or you’re unsure. “The truck does not move unless I know everything going on and that’s around me“. It really is that simple. If you look back at when you hit the sign, I guarantee you had that moment in your mind when you thought to yourself “am I gonna make this turn“ that’s when you stop the truck and you look. And you would’ve saw that you need to readjust. Don’t let people around you pressure you. They can wait, they’ll get over it. And your record will still be clean. As for the incident itself, it’s not the end of the world. But you don’t want this to happen again, or it starts to look bad and makes your employment potential much less.

Sure it's possible. However if nobody saw it, it didn't happen. Just do better and don't hit no more stop signs.
