Currently driving a 2021 Freightliner and almost every time I back up it is like the truck is having a seizure. Eventually creep mode will turn off but the first ten to thirty seconds I have a truck that is jumping all over the place. Is there a way to disable creep mode to prevent this from happening

Hi I have 2021 freightliner, i seen your post and tried to find the creep mode on vehicle settings, but I couldn’t find it, only option I have is only engine ideling. How do I disable that, if there is any help please thank you

If you don't have the option, then you can't.
Why not just let it creep, without giving it any throttle?
It will creep slowly, so have some patience. -

I found turning off HSA or Hill Stop Assist, which was a physical switch on the dash, really improved the jerking while backing.

That should only have an affect if you're on a slant.
