Anybody try eating MRE's, you can get them for less than $10 each. Each one is more calories than most people need in a day, (unless you are an active soldier or equivialant), so you could get 1 1/2 to 2 days food out of each one and have their own heater.
I know you wouldn't want to eat them every day, but as an emergency back up they seem to be a good option.
You can order the military (usually jacked from bases) or civilian versions online.

im a wife who rides on the truck with hubby. im going home for the month of june. while i am at home i will be making frozen dinners for us to have on the road. i just make an extra 2 servings and then vacum sealand toss it in the freezer. we have the lunchbox cooker and thats what i seem to do most of our meals in, so i prepare things that will heat up in that. we also have a crock pot. its small, but just enough for 2 with leftovers. last night i heated a can of pork and beans with some leftover hambuger. hubby fixed some rice to go in his. if i want to get elaborate, i will fix a stew or chicken and dumplins. if we are out on a holiday, i can fix us a holiday dinner too! the lunchbox will hold one turkey tenderlion nicely.
the really big thing to remember when buying all your appliances for the truck..... tax deduction. so save those reciepts! -
fortunatly transam trucks come with inverters and a fridge with a lil freezer I bought a microwave buy all my food at aldis cheaper then walmart bought a coffepot but never use it get free coffee with points just to get out and walk around So far that is all i need

Now for the stuff that will freak you out. Things that don't need to be refrigerated these items are tried and true. IMPORTANT these items have to have NEVER been refrigerated. Some are obvious as I've seen them in the refer at friends house so don't get on me.
Mustard
Ketchup
Mayonaise yes mayonaise
Hot sauces
BBQ sauces
Soy sauce
Terriyaki sauce
Eggs most farmers markets have them out but I have bought them at the store and they've been refrigerated no problems
Leftover meals will last easily until lunch even dinner use discresion
Myself wife and kids cruised on our sailboat in tropics for 2 years and never got food illness. We learned this from other cruisers, we were skeptical at first, but it sure saved space and limited opening fridge in turn saving on the amp usage. Were in house now and still do same today -
Back in the day, people used the engine while they were driving to cook. They would wrap up something in fuil and put it close tothe exauhst and have a meal when they stopped. I'm sure you could google up a few recipes.

There are some companies such as US Xpress that won't allow you to even carry charcoal and lighter fluid though, much less gasoline. -
If you have an high wattage inverter or apu, get a George Forman Grill. I started cooking steaks with mine a couple months ago and it works great. Also works on vegetables and even eggs. Much healthier and cheaper than Truck Stop junk. I also have a MR. Coffee maker. I also have a woman with me that cooks.

I cooked for hubby when I road with him before too. The only thing about the George Foreman is it gets too runny sometimes. Hubby put screws in the front legs to raise it up more level.
We would luck out sometimes and be able to stop along a fruitstand during the summer and stock up on fresh veggies. A burrito wrap could be loaded with all kinds of fresh cooked stuff. Peaches with cinnamon and sugar and cooked then added to chicken is good. Nothing like a fresh homegrown tomato.
Tyson has grilled chicken white meat which would be good too for making something different if you have a refrig or cooler to keep the extra in. John Soules brand at Walmart had beef strips which was good also to make Philly subs with. -
I think we were in Iowa 80 a few years ago and they had the MRE's there, sounded cool if you were stuck somewhere with no electric.
