Petro off I-64 in Raphine, VA has good BBQ(most VA BBQ tends to be good). They have it both in the main restaurant and convenience store. There is a smaller truck stop across the street that also has BBQ.

Not a truck stop nearby and I don't know if they would let you stay overnight but its an easy loop off US 52 in Winston Salem, NC and the food is homemade and priced well. Hills Lexington Barbecue on Patterson Ave which runs parallel to 52. Decent sized lot. This place has been here since 1951 and is the real deal for Lexington style pork barbecue.

Soulman's BBQ i-30 in Texas, exit 77b I think. I'm not a fan of Soulman's bbq, it's a big chain and overrated. There are several others. one on i-20 a little west of Louisiana near a Loves.
Random BBQ shack i-40 in Tennessee exit 87 Right across the street from a Loves, they have parking for about 10 trucks.
Alma BBQ i-45 in Texas exit 251b (This one isn't a truck stop, but there is room for about 5 trucks on the shoulder of the service road. Usually only 1-2 LTL drivers taking breaks there.

Missouri, I-70, exit 28. Found this place a couple of days ago: www.kcbabybackribs.com . Park at the Oak Grove 70 Petro. Walk towards the Quick Trip convenience store across the road and you’ll find them at the bottom of the hill. I just had the ribs and I thought they were real good. (But what does someone from Idaho know about good BBQ?)
