Here's what I think you're doing. Tell me if I'm wrong.
Using the picture that Peterbilt 2005 posted;
1. You're in 5H
2. You flip the red thumb switch (splitter button) back toward you
3. You lift your foot off the fuel
4. You pull the stick back but instead of coming out of gear it bangs and revs up?

Sounds to me like you are pre-selecting the splitter and when you break the torque by lifting your foot off the fuel, the trans is down shifting into 5L before it gets into neutral.
Try:
1. Shifting into N before you move the splitter button, or
2. do everything faster (i.e take foot off fuel, flip splitter, move lever all at the same time), or
3. single clutch to get it out of 5H -

Well did pretty well yesterday. Made some mistakes but all in all did well. Drove it like a 9 speed unless I was loaded. Was at about 95000 first load yesterday morning and floated every gear except the 5h to 6l. Down shifting was just ok. Sometimes when I slow down and have to just choose a gear I mess up but if I progressively downshift such as 8l to 7l I can do that way a little better.

I think that Rank is right on about being too slow coming out of gear. What I did was put a little pressure on the stick and as soon as I let off the throttle it would pop right out into neutral. Some times you can also move too fast putting it into the next gear and that is one that is easy to do in that position.
Funny that you all say CATs love low rpm because at 1300 mine is lugging. It has been that way for everyone that I have driven. They have all liked to cruise between 1500 and 1600 rpm so I shift at around 1700-1800. Heck, my current truck will run up to 2500 or more if you let it.rank Thanks this. -
Well been looking at a lot of video on shifting, will be back at it in the morning, in a couple of weeks it's gonna be funny how simple it is. May be in my truck by end of week , they are fixing a few things and it's an 18 speed.Gonna drive that like a 9 too and split when loaded.I think it is also just the newness of the things in this truck because my trainer struggles a little bit with this same new gearbox he said last week when he first start driving this truck he was really rough.I watch a Eaton Fuller video and they said its okay to drive it like it at speed or 9 speed
