Like what was said above there is no federal law concerning carrying a gun in a truck however you must know and follow every state law that you pass through. I strongly suggest reading the laws themselves rather then listening to random people on the Internet that don't care if you end up in prison or not.
As for knives it gets even trickier. Most states have premtion over gun laws. With knives a lot of states do not so the laws concerning knives can change from county to county city to city. I'd stick with a simple folding pocket knife.

The other factor is whether signage in your state has force of law or not, as a gun owner you should already know the answer to that at least for your home state and any reciprocity states that you carry in. In my state signs have no force and neither does business policy. So I can drive by any "No Firearms" signs I want and will not be breaking any laws. That's unless I'm found out and don't leave when I'm asked, then I'm trespassing. Breaking a company policy could still get you the boot, but no law would have been broken. -

If you are over the road you will have to abide by each state's laws. If you are just running within your state and permit I would think you would be okay. Also companies have rules in regards to firearms.
