In this months Landline Magazine they had an article from a lady trucker who's been on the road for I think 20 something years and she published a cook book for truckers/travelers.
It's like $8 bucks on Amazon. The reviews on it are good.
It's called Travelers Cookbook by Patricia Churchet -

I just look at the recipes and modify them as needed to work with what I can do in the truck.
All it really comes down to is making sure things are cooked all the way through properly, especially meats. Just look at the basic cooking settings and times and modify the ingredients in the recipe for what you can carry in the truck or fir the complexity you want.
