I suspect the problem with tilting that antenna forward at a 45 degree angle to get a good match is more of a mental problem than a physical one, since it seems to work perfectly fine for everyone else

Hey Craig if you're not too pissed off to try something new I guarantee you'll have much better luck using this than what you're attempting to do...

Craig the wilson Cascadia mount packaging states it's not recommended for antennas ove 5.5ft. It would likely not hold up well with your 7ft. Skipshooter or a dipole without addifional support as Mike shows early in this thread. The mount I used was not branded but is noticeably heavier in construction than the wilson.
