When you ignore the garden for a few days,,,,
Sometimes you find a surprise zucchini !!!
When they get this big,, well the only really good thing we've found to do with them is to grate them on a mandolin and pickle it as relish!!! Comes out good, never know it's not cucumber, unless you do the same with the summer squash, then people ask what the yellow is!!
My mother will half them lengthwise, carve out the seeds and stuff them,, basically a Meatloaf boat! But the skin is so tuff it's really just a vessel for the filling....

 

Zucchini cake and bread.

 

It happens!!
My wife will also sometimes make a chocolate zucchini cake with it, pretty tasty, and I don't care for chocolate stuff,,, very moist kinda between a cake and a brownie!!

 

Whatever Ya decide to do with the Monster Zucchini betcha it goes well with Ur ####tail!!

Live and Work out of Erie PA. Was down by Kittanning Thursday. Went to pick up a dropped trailer right on 422 near Indiana PA at a convenience store / pizza shop. Think its called Cory's. One of the O/O hit a big buck tore his front end and rad to"tihs" he couldn't finish the trip.

 

My wife makes pickles with them. Tried the whole stuffed idea and they didnt turn out to bad but we havent tried it again.
