On a serious note, are these grease traps that catch the grease in wash water before it goes down the drain? Or do they have some pit in the back to store used grease or something? I've never worked in a restaurant.
Most of the restaurants here have a grease dumpster that's out back, surrounded by cats and raccoons. I think they just wheel the used oil out in buckets for the animals to eat. -
Trap under sink in backroom sometimes basement
Heat off commercial regrerators
No ac at night
I think they would be dead honestly
Especially considering it is fast food joint
