So if I’m going left at an intersection and I come up to a one lane left what I’m turning into is a two lane.. am I still taking the outside lane? being so the cars will be behind me I won’t have to worry about anything else but to take that outside lane right

TAKE wide turns and outside lanes, you don't need to clip a car in the left turn lane of the opposing side of traffic.

Single turn lane turning into a two lane road should make no difference. You can hit either lane, depending on where your next turn is.

Check your state drivers manual. In my state, well, in all of them that I know of, when making the turn you described, legally, you turn into the nearest lane. In this case, the left lane, then signal and move to the right lane when it is safe to do so.
I'm not saying that is the common practice, or even the safest practice, but it is the legal way to do it.
Now, if there are two left turn lanes, you would stay in the right hand left turn lane, and turn into the right lane.
