Doesn't Mack run a centrifugal oil filter (spinner)? It would most likely be on the same side of the engine as the turbo. These can tend to remain spinning long after shutdown. With age the bearings can tend to get noisier as well. Double check to use the original Mack filter as aftermarket filters can spin at higher rpm's and take a look at the upper and lower bearings while your in there. I may be way off here, but it was the first thing I thought of.

This mack has 2 normal oil filters on the drivers side of the engine... While I understand that the noise is not loud all things considered, Out of all of the turbo diesel engines I have heard, this turbo is the loudest one thus far upon shutdown. I was just concerned about if the bearings on the turbo may be going out or not.
Oldironfan Thanks this. -

If I am not mistaken the E7 has a centrifugal (spinner) oil filter. It will be in a black, cylindrical plastic housing. It continues to spin for about 5-10 seconds after engine shuts down. EDIT. Sorry Wore Out. Just saw your post.
Oxbow Thanks this. -

its your centrifugal filter. they seem to be more noticeable when the filter is new. open the hood shut the engine off and put your hand on the centrimack filter you will probably feel it along with the sound. should be the furthest back twards the firewall oil filter with a hose coming off the bottom of it. hearing it spin down is perfectly normal
