Don't get a plastic one. Warm oil warps them and eventually you'll drag a hole through the bottom. Best pan I've seen had a tapered surface just under the screen plate and went toward a center hole that could be capped with a 2" pipe plug. Add a coupler for the evacuation hose on a bottom corner and a air fitting for shop air near the top (regulated to 5 psi) and you can empty it with air pressure.

With this pan I have I just use a pneumatic diaphragm pump to empty it.
