This summer is the first time I've really played with serious cooking on my home made grill, I'm really enjoying it. Specially since I decided to start using hardwood to add some smoky flavor to things. Its been a learning experience for sure, but I'm getting better. It probably helps that I have lots of experiemce cooking over an open camp fire. I designed this grill specifically for cooking over a wood fire, for smoking I've come to find that a pile of charcoal helps to keep a more even temp with the reduced air flow. Now I'm trying to work out an actual lid for it, instead of Dutch oven liners. Thinking of trying to find a slightly bigger rim and split it along the mounting gully, then adding a 5/16 steel plate for the top. The part of the rim that the bead seats against would sit be the bottom. I just have to do some looking around to see what I can find.
