I did the water bottle thing just at idle. The darn bottle moves towards the windshield. SMH. Got a lot of smoke too. 3500 miles since rebuild.

Joey from what I could see those rear motor mounts do not look right.
Can you take a better picture of them?
They should sit level with one another and you should see squeezed rubber cushioning between them. I'll go back and look again but they look like the mounts themselves are hitting one another.
Also the series 60 has a large shim under the front mount and I believe it has small shims on the rear mount. I would have to check dtna connect about the rear mounts but I'm pretty sure they had shims in them also.
That's how the series 60 was set up in my 95.
If they did not put the shims in, the engine will not sit right and the motor mounts and everything will be wrong. Also the Driveline angle will be wrong and that will screw up your U-joints and caused vibration Etc.
Also it's possible if the shims are not there the engine sits too low, and there could be something, an accessory the exhaust pipe, there could be something that's hitting the frame or whatever.
I would check with the U-joint shop and find out if they adjusted your drive shaft angles. When you are replacing the same engine everything lines up as it was. If they had to change Driveline angles that's not good.
Not that this is part of your problem but there are also are shims for the carrier bearing. If they did not put them back in exactly as it came apart you will have Driveline issues.

I don’t remember any shims in mine, it’s a 2000. Only thing close was a plate between the frame and bracket. First thought was a shim, then maybe a sacrificial metal plate for corrosion. Not sure if it’s purpose. Clearly remember leaving the right side one out, after doing the left one, and finding a plate ( thought it was a one side only factory shim) I found the right side laying on the ground. In a hurry while redoing the right side to put the stupid shim in, the jack slipped and smashed my finger. Almost lost the tip of it. Be sure to use a hoist, or remove oil pan, and use wooden blocks and a stable jack. Don’t jack it at the bell housing. I was warned by a mechanic, but did it anyways. Should have listened.

Just an opinion but I will bet it’s either out of time or ambient air temp sensor is reading colder than actual temp.
