OTR Traveler: I have reread this post several times. You started it, posted in the middle and here you are at the end. You answered your own question with your opinion of how this should be done.
Many different people have stated different opinions on what is best. I agree it is different with different applications. I would rather run oil in most cases" that have to be watched". Is that not part of of pre, during and post trip inspections? Do you ever put a hand on the tires or hubs when you come off the road to check for heat?
I would prefer to have a seal leaking letting me know I have a bearing problem then be on the side of the road with a spindle burned up with grease.
If you repacked them every time brakes had to be done like old school Dayton hubs would be one thing. Just once a year is not good financial planning. What if you had three of them doing them yourself?
