    Those that aren’t leveraged to the max will be able to make things work. A close friend of mine recently sold his home in Missoula County MT and moved to the neighboring county after Missoula County increased property taxes over 10% to cover all their pet projects.

    The people that are stuck due to life or their own choices will feel it the hardest. They have no choice but to deal with their current situation. In a way that contributes to the gap in society. The other side of that is the choices people have made in the past. $60k pickup. $50k 5th wheel camper. $40k side by side. 3000sq Ft house. But I’m supposed to feel bad because they’re struggling?

    I’m sort of rambling. I guess what I’m trying to say is it isn’t all just one factor. It can be a combination of greed and poor choices and the economy in general. Telling someone how much they can sell food for sure isn’t going to help much. A guaranteed minimum income isn’t going to help much.

    Back to Missoula County, one of the best quotes I saw regarding the property tax increase was a renter who didn’t understand why her rent went up after they raised property taxes because she didn’t own the home.

    There’s just some hoops to jump thru in the processor isn’t USDA certified. If you don’t have the freezer space or someone to purchase beef with you then you’re forced into boutique prices at a small USDA processor because on paper it has to look like the person owns the animal and is paying for the processing at a non-USDA place.

    Yeah it’s been like that for years now. I think a mobile butcher has to pay a usda inspector to come and watch. I may be wrong. @Oxbow probably knows more

    My son and daughter-in-law deal with that. My understanding is that a custom cutter can process an animal that is owned by the customer without any USDA involvement, but if one is trying to sell meat then it is supposed to be USDA inspected, regardless if the processer owns the animal or not.

    @Long FLD has it right to my knowledge.

    If my brother and I each wanted half a beef from my nephew we’d buy the animal from him and pay for the processing. But he’d be a nice guy and take our animal to the processor for us. It’s just paperwork but if you don’t have enough people to make the paperwork work out then you’re paying high dollar for farm raised meat.
