    Dropped in Olathe this morning after a long night of driving. They didn't have any emptys so I was told to bobtail out. Pulled into the ACT yard, found a spot to stuff my truck, packed my car and heading home. I'll be back out Wednesday morning

    About the pork butt. LOL The Shed, down in Ocean Springs MS, uses only minced garlic on their butts. No spice other than that. Being a garlic farmer, I have to try that. Also, I use one of those aluminum roasting pans, you get in a stack of 10 or so, for the butt. No wrapping at all. It bastes in its own juices, and turns out fantastic.

    . I use a local rub, and foil at 120/140, if I feel like it. If the bark is nice and light, I’ll let it run. I generally push it to 200 to get a nice slump. I’m up to try anything, though, and sometimes I go Carolina style. Got to say that quietly around here. I live an hour out of KC. lol.

    I have a Shirley 24x65 smoker. Probably a lot different than you're used to.cooking with, noting your tems. It takes me 8-10 hours at 250-275 for a butt. 6 for ribs, 12-14 for brisket. Watching fire is nice. Controlling it is a wonderful thing.

    Forgot to mention - I wrap it to rest it, usually 2 hrs, sometimes more, sometimes less.

    Just wish I could drag myself out to cook more. But I don't have anyone to cook for, other than my wife and son. And on a smoker that big, I like to do at least 4 racks of ribs. I think it's time to fire it up, now that it's cooling down outside.

    Just dropped BB Olathe, be lucky there were no MTs, they make a freaking mess out of them. I don’t know if it’s on loading in IN or unloading in KS but dang it.

    This Driver doesn’t mind sweeping out a trailer now and then but when it requires a shovel I provide feedback on some kind of Reverse OSD Fee for us having to clean up their damages.

    That and their check in process just irritates this Driver. It doesn’t work as expected, and the guard comes out to do it for you. Requires a scan of your license and sometimes requires a special code sent only to your phone!!! Why? You have the BOL and a scan of my CDL, why do you need to screw around with sending me a special code to my freaking phone… which is back in the dang Truck…

    oh, and, with the slow checkin and checkout, plus trailer shoveling, 1h25m and I still wasn’t out the gate.

    so I’m now pushing it into a 2 hour “break” to reclaim the time as I will need every available minute today to get down the road a bit tonight heading to MA for Wednesday morning appointment.

    Understand. My primary is a custom 24x72 offset. I seldom fire it because of its size. Temp control is fantastic, but it takes a cord of wood, lol. I use an OK Joe’s Highland offset for day to day cooks. It likes to run at 250, and our times are similar.
