    Myth One: Mustard based sauce is a SOUTH Carolina Thing..

    There are three types of BBQ in NC.

    1. Eastern NC BBQ: Whole hog slow cooked over charcoal or wood and vinegar based sause.

    2. Western NC BBQ: Butts and/or Shoulders slow cooked over wood or charcoal and a tomato based sauce.

    3. Piedmont: Whole Hog or Butts/shoulders slow cooked over wood or charcoal and a sauce that is a combination of eastern and western styles...


    Myth Two: Yankee's do know how to BBQ. I am living proof. Born and raised in upstate NY and I have been a competition BBQ'r for 4 years. :biggrin_2559:

    This is true, except if you can't smell SMOKE get back in the truck and leave. You can smell gas cooked BBQ in a parking lot too.

    Dinosaur's in Syracuse and Rochester NY: Some of the best in the country.

    Clovis, CA Has QN4U BBQ. QN4U is one of the best BBQ teams on the circuit

    Dixie Bones in NYC is fairly good.

    Allen Bros. in Chapel Hill, NC is good.

    Wilber's in Goldboro, NC is good.

    Salt Lick near Austin, TX is good

    Rudy's Near Tyler TX has some great brisket.

    Checkered Pig in Charlotteville and Danville, VA is good.

    Q Barbacue in Richmond (http://www.qbarbeque.com/QRestaurants.html) is run by Tuffy Stone AKA Cool Smoke. If any of you had a chance to see BBQ Pitmasters ON TV last year Tuffy was one of the teams they followed.

    I never could get the hang of mustard based sauces. Just plain nasty to me. ;)

    And cooking BBQ with gas should be a capital offense...

    Hello yes keep going on and on! There is never enough information on where to go for BBQ! Those guys still driving need this vital information!

    OK, I was wrong on the NC/SC deal mistyped!! Mustard based still isn't right!

    OK, I'll concede that there are a FEW Yankees that can BBQ!

    The sad thing about Fetts is in NYC the fire department gets just a little upset at the sight or smell of smoke! Fetts uses a weird glass lined cabinet almost like some of those Gyro goat cookers. But if in need of a BBQ fix this will tide you over! Go find celticwolf if you have to! LOL

    Always follow the smoke for good BBQ! That is a fact! It can also save your life if you used that GPS and it took you down that trail in the mountains! Yes if you find a creek follow it BUT find the smell of a BBQ fire and you're saved!

    Ribs, butts, shoulders or pulled and chopped and yes even a bird or two! It's all in the smoking, the rub or sauce used!

    The final test of good BBQ is if you'd crawl a mile through a briar patch for more!

    And yes gas just doesn't get it done even with a tray of hickory wood thrown in!

    IMO Clem Mikeskas Temple, TX. Im big on brisket. Either its outstanding or its not.. This place has me coming back time and time again. When I think Great BBQ this is the place for me. Traveling I35 exit 299 its right off the big road. Easy off and easy on. There is a Cavenders boot city across the street that is truck friendly with ample amount of parking space. Man, some of that brisket, beans, potatoes and a tall glass of sweet tea sure does sound good!

    Dizzy Pig Rubs ( http://www.dizzypigbbq.com ) will make an old tire taste good. They even work well in an oven or whatever you have to cook with.

    Big Butz BBQ Sauce is really good and he'll ship it anywhere the post office is. ( http://www.bigbutzbbqsauce.net/ )

    When I get out of training and with my son I will have one of my small BBQ cookers with us. It's perfect for one of those rest areas that have truck and car parking areas.. It's small enough that it's easy to tote. Good enough that it will work at 40 below. Fast enough that I can cook, cool it off and roll quickly. Now I just need to figure out how to make tea by the gallon.. Considering I drink a lot of it..

    Maybe I'll write a truckers cook book :tongueSTARS555:

    Carlisle Arkansas I-40 ex 183 (HWY 13) 1-1/14 miles south is Nick BBQ and Catfish. Both of my 2 favorites on the same plate:biggrin_25525: They have truck parking also. Thats bout the best i've had anywhere other than around K.C.
