    The rice cooker will also steam vegetables which is very nice. I have started eating more fish and one of the recipes I like is to brown a tilapia fillet, sprinkle with lemon juice and when just about finished layer fresh spinach leaves over the fish and then let steam. Awesome meal.

    The biggest problem with truckstop food is not the cost, but the lack of anything healthy or nutritious. Getting worse each day as more and more of the chains close their restaurants to put in 'fast food' stands. So, here are the options I chose for the truck (VNL): 1500W AC Inverter - forget DC cooking utensils, they take forever and cost lot more than the AC ones.
    (1) GE AC Refrigerator (office sized). Keeps foods frozen and cold, has 5x the room and uses 1/4 the power of those useless DC coolers. (2) AC Powered Crock Pot - Walmart $32.95 Start a stew when you begin the day, ready in 4-6 hours. (3) Walmart A/C coffee pot $12.95 - besides making coffee, it quickly heats water for oatmeal, Noodles, those instant cups of soup, and much more. (4) GE Omni-5 combination 700 Watt microwave, toaster oven, broiler. And it fits on top of the fridge too. (5) Coleman portable propane bar-b-que. Fits nice in the side compartment and great for those non-windy days. Cooks well sitting on the rack by the 5th wheel.

    Haven't had to eat at a truck stop in over a year!

    Hi everyone I need help hubby and I drive teams. He just bought me a small box oven to cook in truck. I need some cooking receipes and some other need to have cooking things on the rig. Open for suggestions either books to get or websites.

    look for other cooking in truck threads i saw a few in there maybe this one maybe not. i am so looking to experiment with that oven. have cooked a couple of things in the car. so i know i will love it.

    I am not a trucker yet but am studying. will start school soon. i will not eat truck stop food more than 1 time a week. have a max burton oven
    microwave(small) electric fry pan(small) and a crock pot. i will add a coffee pot for hot water and i have 2 cubie fridges here one a lil bigger than other 1 rectangle shape other is a cube.

    i noticed someone suggested to do a recipe thread in cooking in the truck. since that thread talks mostly of items to cook with. i thought would be a good idea knowing some easy recipes that you can make in the truck.

    open up a can of tuna......eat it, throw away can......done.....simple recipe.

    open up a can of beans.....eat it, throw away can.......done.....simple recipe.

    open up a jar of peanut butter, put on crackers, eat, close jar, simple recipe.

    go into truck stop....order food...eat it, pay, go back to truck.....simple recipe.

    you're right.....this was "some easy recipes".......!!!!

    thanks i knew i saw 1 but could not find it someone wanted 1 for lunch box cookers.

    Thats my favorite recipe! I do that EVERY night!!!!!!! :biggrin_2559:

    I'm trying to look like a "real" trucker, but I've lost 2 lbs since I went on the "Super Trucker" Diet:biggrin_2557:. I'm only 110-112lbs :biggrin_2559:.

    OK - I'm use to cooking at home - where when you go shopping, what ever you don't use during cooking, you can put in the fridge for later use. Now we are not planning on seeing 'home' for months at a time... so my question is - how do you buy 'small' quantities? There is just going to be the two of us and we eat enough for one normal person (gastric bypass). Are there any 'tricks' or 'suggestions' on how to buy in smaller quantities? I don't want to waste any food - but I also don't want to eat the same thing for three days straight either :biggrin_25513:
