cooking in the truck

    Im about to have extra food, quite a bit. Anyone ever share with other drivers at truckstops? Will they even eat it, since a "truck driver" cooked it? slow simmered lil smokeys in plain ole kraft bbq sauce, added brown sugar, onion slivers, and a pot of rice. I will prob eat this two or three times, but I have way too much.

    We made a delicious corn bread in our Lunch Box Oven. We greased the sides and bottom of the aluminum tray insert and baked Jiffy Cornbread mix. Instead of the baking time on the box we gave it approximately one hour. Bottom browns nicely and if you want the top to brown, have a piece of aluminum foil on the bottom before you insert tray and once one hour is up, tap bread out of insert, back into oven that has the aluminum foil liner in it (top of loaf should now be facing down) and bake another ten minutes. Really delicious.

    We also make a stew of sorts. Like last night we took one large potato, one medium sweet potato, and half a link of smoked beef sausage, salt, pepper, garlic salt and had a tasty evening meal. I sliced up the potatos and put them in insert with about one cup of water, seasoned and then set insert into oven. I put about one cup of water into over actually before setting the insert in there. I cooked the potatoes for about one hour (until you can insert a fork into them easily). I stirred up potatoes and then layed the cut up sausage on top of potatoes. I think it was about one hour later (we walked through Wal-Mart and window shopped a bit). In regards to trying to find things to prepare on the road, this really was pretty tasty. We bought a loaf of Italian French Bread and presto, dinner is served.

    We would love to have an inverter that powered these items but our company is against any inverters (Swift) so we just have our 300 watt inverter that we keep on the down low when in for service. Right now I am using the Lunch Box Oven only. I love it, but if you have multiple things to prepare it can be tricky.

    I don't think it is that easy. We aren't allowed to have an inverter in our truck (Swift) although we do carry a 300 watt one. We haven't been able to find a coffee pot that will work with that. Any ideas?

    i carry a single burner propane stove, plus the lunch box style cooker (works awesome for hot pockets going down the road) been considering picking up the ozark or coleman 2 burner fold up propane stove (space savers). good weather person can cook out side, bad weather the single burner works enough for some ramen noodles. thanx to tmax i'll be able to make a batch of cornbread now. jiffy isn't near as good as my recipe, but would do in a pinch.

    if one has imagination and isn't afraid to try some nasty food from time to time (due to invention rather then poor culinary skills) one can find some very creative things they can fix on the road and save a fair amount of money in the process.
