I've been driving OTR for 3 years now. I'm running out of recipe ideas and certainly sick of fast food and truck stop garbage.
Does anyone have any healthy ideas of what to eat and how to prepare it?
I have a mini fridge, a microwave, a crock-pot, and a george foreman grill.
Any and all help is greatly appreciated. Thanks!

guess it all depends on what you like, one of my favs in the crock is hobo, consists of sausage, cabbage, green beans, corn on the cob this time of year, red potatoes, onions, and just about anything else you feel like trowin in, start in on low at the beginning of your day, and when the aromas start after 3 -4 hours, you be going nuts for a place to pull over and eat

these are a few places that i have found over time, i have tried a few of em in the past, some were great, others were not,
one of my fav, got pork rost, and a jar of those Ring Pepers, put the pork in and dumped the whole jar of pepper rings, and juice right into the crok pot, cook for about 6-8 hours, depending how big your pork is..
makes a great meal,
the crok pot bag liners suck, many many times in the past while using them, they have melted and just creat a bigger mess.... maybe i just used cheap bags, but maybe worth the shot, easy clean up for the cop, just dump a few cups of water in the pot, and use a little baking soda and let it sit for a lil while, dump it out, and use some paper towles to wipe up..
also, KStump, using a George Forman is a great idea, its also very dangerous, always use it outside the truck, not near the fuel tanks,
when i use mine i usually use my catwalk when not hooked up to a trl,
but most of the time use the ground...
i store my GF Grill, Crok Pot, and my small electric Grill under the bunk, to keep it clean and keep any extra greas off the floor of the truck, i use an old ** MUDFLAP **... that way greese n oil isnt all over the floor...

soon2be, you reminded me of Pepperoncini Beef in the crock pot. There are many versions, but the simple one is great.
I'll give you the large crockpot version and you can cut it in half for a small crock pot.
4-5 lbs beef roast, I use a round, chuck, rump roast depending whats on sale.
1 16oz jar of pepperoncini peppers, juice and all.
2-3 whole cloves of garlic. Being in a truck, you can just cut slits in them and throw them in and remove them at the end. Or use minced.
I usually throw a sliced onion in too, but you don't have too.
Cook on low 8-10 hours or on high 5 hours. I never tried it in a truck, so it might take longer. Just crock it until the beef is tender and falls apart.
You can serve it on any kind of roll or bun. I like Italian rolls and Provolone cheese.
It is definately yummy. -

I just have to reply. While I am not a trucker yet, I lived on the road for a few months when I owned my own truck, but during that time I was doing contract work in another field. A few years ago I bought a Nu Wave Oven. You have to see it to believe it. But I liked it so much I bought another. I know for a fact that I can eat healthy and better than any truck stop for $40 a week or less. I am not talking about vienna sausage or spam. Here is an example:
Bagle bites...40 count...$7 - cooking time frozen 7 min...thawed 5 min
Pork chops...5 pkg...$7 cooking time frozen 14 min...thawed 9 min
Chicken thighs...8 pkg...$7 cooking time frozen 25 min...thawed 20 min
Variety of veggies...$7 cooking time depends but it can be cooked on the oven at the same time.
Total cost for week $28
Now the unique thing about a Nu Wave is it can also reheat a previously cooked meal.
This thing...bakes...grills...steams...dehydrates...reh eats
Clean up is a breeze....
Just go to you tube and see for yourself all the things that a Nu Wave Oven can cook.
I recently cooked a frozen 14 lb turkey to perfection in under 4 hours....
This thing is amazing...and I will actually be showing everyone in my training class how to cook on one...and I will be taking it to orientation also since I know the company I am going with has apu.
There are 2 different sizes...regular...1500 watt max...but I have not seen it peak over 1430 watts.
I have not yet used the smaller one, it is on the way...but it says 800 watts max...so I imagine it will only have a 730 watt peak... I know it will take a couple more minutes to cook something, but it will still save me a ton of money and I will be eating healthy...
