Gay Johnson's just east of Grand Junction on I-70, and Johnson's Corner between Longmont and Ft. Collins on I-25, both in Colorado.
NOTE: I have not been to either of these places for years, but both have been open for a long time and always had good food and service! I hope they still do.

Dick's Cafe in Las Cruces, NM. It used to be a truckstop on old US80 before the building of I-10 forced it to move to it's current location. My dad and I would go there a lot.

My favorite place is Woodys at LeRoy IL, its at the 149 on I-74 they actually have more than 5 things on the menu, and it's all soo good! Another favorite is Jamestown ND exit 260 the Tessoro truck stop, doesn't have a lot of parking but you can't go wrong with the resturant.
