There are many threads on this. If it is properly secured and your company approves of it, the answer should be yes. You should read the threads.
You will have to carry gas to it. There also may be laws regarding the storage of gasoline. I would think the portable A/C would need to be secured when driving. -
There is also propane conversion kits available for many portable generators. I know that they are available for the portable Honda EU2000i and Yamaha 2400is units. You can mount a tank bracket to the frame rail and run a line to the generator. Much cleaner, safer, and a typical 20# tank is easy to remove and refill or exchange everywhere and will last a lot longer than a fill of gasoline.

they make portable AC/Heaters. Would take a 2000w generator to run them. They roll around on the ground. All you need to to is hook the hoses out to the window and your up and running.

I saw a guy with a generator chained to the back of his cab running a RV AC unit, seemed to work pretty good.

I have one of those in my house. Git it from Costco. That would work great in the truck. It would freeze your ### off.
I have also seen Large Gens strapped to back of sleepers. Many times.
