Most places don't use enough heat to cook and meat ends up tasting like that, especially when you order it rare to medium-rare.
I do like Big Texan's fillet. They cook it to my liking (cooked on scorching hot plate instead of grill, slightly burnt outside, bloody red inside)
Harris Ranch in CA off I-5 is alright, and they got plenty of truck parking. I'd still support their business even if they had lousy steaks, because they have a portrait of Ronald Reagan right by the entrance and not apologetic about it (did I mention they are in Commiephornia?)

Big Texan, Amarillo
We(wife and I) stopped there and split a 16oz Filet Mignon. Parked in back lot and enjoyed a very very tender steak cooked to perfection. (they also have 8 oz)

Slidell, la there is a Texas roadhouse walking distance to T/A, I been to big texan also, its a joke. Steak was not good at all. Texas Roadhouse for the win.

I'll stick to Carrabba's sirloin marsala. Bit pricey, but perfectly cooked and seasoned. Not bad for an Italian chain restaurant.

ALWAYS Send it back if your not satisfied! They will make it right. Our steak was outstanding, but Tenderloin is a better cut and should be cooked no more than med rare.
