Great movie I just saw on the subject, called Fat Head.
It's is a response to Super Size Me, but it also has a lot of good info on how food works in your body. It is on Netflix now, if you have it.
Short answer is limit your carbs, and try to make the carbs you do eat the high glycemic kind ( Googling it can give you better explanations than I can) -

This is the number one toughest things to do while out on the road! In case you haven't noticed!
You have to literally have a second logbook that pertains to just your health! Make it mandatory just like your other logbook. Log what you eat,number of calories, how long you exercise etc... Keep in mind your body uses way less calories a day while behind that wheel. If you eat a subway sandwich and its 1000 calories, that's pretty much the max of what you are going to burn.
Make it a challenge for yourself to come up with interesting ways to exercise and you will be more likely to do so. Turn your truck into a gym. You can do pullups under the trailer, upside down push ups with your feet on the steps. Your steps can also be used as a stairmaster. Lots of things you can do with bungee cords for resistance. Just cranking your trailer up and down is very good cardio.
You get the point. Aint easy but can be done. I lost 78lbs while over the road! Ironically those pounds were put on while on the road but nonetheless. Even if you aren't hefty you really should be exercising daily just for health.

thought you all would like to hear my dinner in light of this thread, so all day did fine couple protein bars and a bowl of organic soup. dinner rolls around so I decide to hit up jack in the box because I love their salads. So I get the chicken club salad with light ranch dressing ...and then it went to hell. Asked her to make the grilled chicken crispy instead and then I said give me another four chicken strips and a sourdough jak combo LARGE size with curly fries.
2500 calorie dinner. ate.it.all. -
What do you all think about toting a folding bike in the truck and/or the ability to find a place to ride it while on the road? I'm thinking about this one...

There's A LOT of info in this forum about Healthy diet while trucking, cooking in the truck, etc... Just do a search. I lost 20 lbs since I started trucking. I didn't become lazy, neither did I start eating truck stop junk food, I don't drink sodas or coffee, no sugar, don't smoke, cook in the truck, I've been vegetarian for 30 yrs. I buy groceries at Walmarts (there are lots of WMs on the road)... I don't have refrigerator, no microwave... have a cooler, buy ice bags everyday, keep plenty of food -fruits, vegetables, can beans, legumes, granola, dry brown rice, pasta, water, etc... stored in the truck so I never go hungry no matter where I am or if I get stranded somewhere for days. I take my vitamins, complex of vitamin B will give you a lot of energy... It takes discipline. Avoid candies, sweets, chips, junk snacks, truck stop junk food, fat meat, too much bread, fried food... walk some... You will lose weight.

The body does process all sugars, some more efficiently than others.
I have an intollerance to lactose, the sugar in cows milk, but my body still processes it. -
I eat truck stop food. I eat fast food. I refuse to cook in the truck. After 4 years I am still 5'11" and still 200 lbs. The same weight I have been for 20 years. It is about portion size, and being active. One does not need to Give up the food they like to stay healthy. Everything in moderation.
