Hammond LA Petro cajun cooking

    A few days ago I was passing through Hammond LA and decided to run in by the fuel island and see if they had any cajun food since I love trying local cuisine when I'm in an area. Much to my surprise they had boudin and andouille sausage. The price was a little steep, like $3.50 for each. Yikes! I hope they're worth it. I'll take one of each, please.

    I started with boudin. The lady told me it was pork with rice and seasonings. Okay, I'll..wait, rice? in this sausage? Well alright, I'll give it a shot. At first it was a little weird eating rice inside a sausage casing. The seasonings were actually pretty good with a little zest and after the initial shock of the rice, it actually wasn't that bad.

    The andouille sausage though was phenomenal. First off, it was rather...big..and the shape was rather familiar. Male anatomy lessons aside, after the first bite this thing was a winner. It was well cooked, it was juicy, it was tasty...it was fantastic.

    I asked the lady if you just eat them by themselves or on a bun or something. She said you could put it on a hot dog bun or a piece of bread with some ketchup and mustard. I did just that and while both were individually good, next time if I could only get one or the other, I'm taking the andouille.

    I love Andouille in my red beans and chicken gumbo. It makes my red beans and gumbo perfectly spicy. $3.50 is steep, but you're at a truck stop.

    u need to try the red boudin, i'm sure once u are told what is in it other than rice, meat & seasonings, u won't want anymore lol

    Thats half the food we eat if you know you wont eat, but Cajun food is awesome ! every time you go thru you gotta try something different !

    last time i eat a chop in the fuel island was one from the best what i was eating in years ,very good taste

    being born, bred, & raised in louisiana i CAN & DO cook what everybody call's CAJUN. to us it's ordinary everyday food & I KNOW what i'm putting in my food. very few people use stuff from the store now days, it's all home grown, home butchered, etc. like i was taught & raised on

    Boudro the cook must of got out of prison if they are back to cookin' cajun! :)

    I was kind of leary eating boudin at first but I liked it.

    I use to haul meat down to this little place in Baton Rouge. One load I took 42,000 lbs of pig tails down there. What in the world do they use these for?

    I asked the guy on the dock and he answered "You're in da hood"!

    Evidently they fry 'em up like cracklins and use them in soups. I think I'll pass! I ain't eating a wiper blade for a poop chute!
