Sounds like the repair shop failed to run the truck at high idle when checking for the problem. The evaporator could be freezing up or low side pressure too low or going into suction at higher rpm's. I would check operating pressures at high idle, Proper refigerant charge, evap temp control and cleanliness of evap, compressor cycling, cabin filters and evap drain.

Sounds like the evap is freezing up, when your stoped do you get a large pudle of water under the truck. if so more then likely your evap is freezing up lots of thing can cause this. but to keep it simple ck to see if the evap filter is clean and if the evap is clean most have a fuzz build up and can be real bad if pet was in truck or driver was a smoker (nicotine) if you find the evap is dirty you can wash the evap out with a hose or wipe the fuzz off. you can also try to turn the temp up a bit say from max cold to say just cold this will give the systm a chance to defrost a bit. this should get you working enough to get to your home shop.

Could be a wire to the clutch or pressure switch. Wiggle em around while it's working and see if the compressor cuts off,

Yeah sounds like stuff is freezing up.. Next time it does it get out raise the hood look at all the lines the expansion valves the drier..... and like bagman said check your cabin filter.
And Olfart has a good point had a 90 kw one time ac went out was in Birmingham alamba spent all night in a HOT truck.. The next day I was trying to figure it out and stepped on a wire under the bed and it started blowing cold.. Turned out there was a relay switch there that the mechanic who had just fixed it forgot to tighten back up.. 3 years later I sold the truck and it still was working..
