Well for the new drivers they don't have enough money built up to purchase the equipment that they need. I did this for my husband before I bought all the nifty little accessories to put in the truck. I go to Walmart and buy the Hormel dinners for 1.98 a piece, they do not have to be refrigerated and can very easily heat up in the microwave at a truck stop. I also bought him the mac-n-cheese express bowls that he could add water to, and heat that right up with the Hormel dinners. I then would buy him cokes, water, chips, peanut butter crackers, slim jims, bread, peanut butter and jelly, with his snacks. I also put in cans of beef stew, chicken and dumplings, chili, and soup along with bowls, can opener, utensils, and paper towels. For the breakfast meals I bought cinnamon roll pastries, cream cheese pastries, honey buns, little Debby's coffee cakes, poptarts, and granola bars. I tried putting fruit in his truck, but it would spoil before he got a chance to eat it so I just stopped doing it.
Now since he has the inverter, microwave, and 12v refrigerator he can keep his drinks cold, and make instant coffee in the truck. I can put in lunch meat, mayo, and refrigerated dinners that can be warmed up. He spends more money on cigarettes then he does food, but he does like that country fried steak with gravy...and coffee at Denny's.Elchery Thanks this. -
Thanks to all who have suggested fruit and salads. Some truckstops and restaurants offer more heart healthy stuff--baked or broiled chicken and fish. Green and fresh vegs. Stay away from the fried stuff with gravy. I love salmon when I can find it. the suggestion for water instead carbonated drinks is a good one. It reduces sodium which lowers blood pressure. Coffee (sorry, without cream and sugar) is actually good for a lot of things. Cut out sweets, white flour, white sugar, bleached and processed foods... use instead brown rice, unbleached flour, turbinado sugar or diet sweetener. Read ingredients--if it has "hydrogenated" oils or something sounding like that RUN FROM IT! Finally, increments of ten or fifteen minutes of heart healthy exercise, like walking quickly up and down stairs or around green areas lowers B.P. and helps your heart. If you do it three or four times a day it's the same as a 45 minute or hour work out.

baked potatoes in microwave take 6 min
my refrigerator has a freezer too so green giant frozen veggies round out my dinners
a roasted whole chicken is 3-4 meals by myself
plenty of single serve items at wally world that are expensive until you consider the alternative
those tyson meatloafs and pot roasts are on my list too -

You guys GET IT. Congratulations! ...and thanks for the new ideas about eating healthy while travelling. When I was in nursing school we constantly had assignments about how to eat healthier and how to teach cardiac, high blood pressure, and diabetic patients how to eat healthier. Here's a link to the National Institutes of Health website. It's free. They're not selling anything. And it's backed up by scientific research in a lot of fields related to health.

Of course it's possible. You just have to want to. With motivation, you will find a way.
