Just wanted to drop a dime on my dining experiences on the truck lately. I have been going to Cabellas and buying "Mountain House" freeze dried meals. They're intended for camping, but work great on the truck. They offer a wide selection of meals, and you can buy them in #10 cans, or in pouches.
I prefer the pouches because you just add hot water, close the zipper and let it sit for 10 minutes.
The meals are made with good ingredients, not crap. When re-hydrated the meat regains it's texture, which surprised me.
Some of my favorites are:
Rice & Chicken
Beef Stroganoff
New Orleans style rice w/ ham & shrimp
Spaghetti with meat sauce
Their breakfast skillet is good too... it has scrambled eggs, hash browns, bacon...
If you're looking for healthy eating give this a try. Another plus is that the freeze dried meals take up a small fraction of the space required by canned goods.
The rice & chicken tastes like it came right off of the stove top.
Oh, I also love baked potatoes. If you have a microwave on-board get a sack of spuds!

Well I just looked at the New Orleans style rice one I had for dinner and it has 140mg per serving with two servings in the pouch. Some are probably less, but this one is quite flavorful. It beats 1200mg in a ramen pouch

I browned 1 lb of chuck on my hot plate, made a package of Pioneer gravy mix, did some rice in the microwave, mixed it all together. Added no salt, the gravy mix covers that. Buttered some bread, toasted it using a plate for a weight, and poured it over the bread, and chowed down. Cost almost 5.00 and no tip.
I feel you need to know, I have a little more truck than most drivers have.
Not better, just more. I used to use an inverter to power a microwave, then a toaster, or a hot plate. I have a gen to do that now. I also have a grill that I spend about 45.00 to 60.00 a week to keep away from greasy foods.

Depending on the meal usually about $9 for a two serving pouch. The #10 cans are less cost per serving.
Sounds delicious. In the summer I use a small gas grill for cooking, but in the winter I'm liking this process of heating 2 cups of water in the microwave and eating in 10 minutes without getting snow down my boots.
Minute rice is a really good option! I use that a lot, too. A cup of rice mixed with a can of pre-cooked chicken works out nicely. Dang it, now I'm hungry!

Be Prepared dot com sells Mountain House. been eating them pouches for years, these are not your Daddy's MR-E's. I love there breakfast pouches. The ones that sell well usually cost a dollar more, single serving pouches go for as low as 5 dollars. you can heat a pouch on the dash if the Suns out.
